Quick and Easy Recipes Empty Quick and Easy Recipes

Post by mythreesons Wed Oct 22, 2008 10:54 am

Hi Mommas!!! I thought maybe we could share quick and easy recipes with each other...Now that we all(most of us)have new babies in the house, it's not always easy to think of what to have for dinner, so fast food becomes a necessary evil.Since I know that most of us are looking to lose a few pounds, if we exchange ideas for meals then maybe we won't resort to the drive thru lane!I'll start with one I know off the top of my head.

Brocolli Cheese Chicken

1can Campbells Brocolli Cheese Soup
1 can Campbells Cheddar Cheese Soup
1 cup milk
1/2 bag frozen brocolli(add other veggies if you want as well)
Pepper to taste
1 lb Chicken breast

Cut up chicken and cook thoroughly add both soups, milk and frozen brocolli...cook on low for about 15 minutes until bubbly and brocolli is hot(can pre-cook brocollli too)Add pepper to taste.Serve as is or over rice or egg noodles...

Now who's got some good crockpot recipes???

Something Similar to yours shannon

Chicken rice casserole
turn oven to 350

roughly 3 to 4 chicken breasts thawed
1 can cream of mushroom soup
1 can cream of celery soup
1 can cream of chicken soup
optional can also add can of broccoli cheese soup or just frozen broccoli
2 cups instant rice

cut chicken into small pieces roughly larger than a bite, but is your preference. put in a large bowl all the soups and the rice ( also broccoli if you want). Mix together thoroughly. spray a large cake pan and then pour your mix into the pan. even out and cover with aluminum foil. Put in the oven for an hour.

I made this yesterday and it was really good!!!!

Turkey Chili

1 TBSP Olive Oil
1 can tomato soup(supposed to use no sodium one)
1 can diced tomatoes( I used a 28oz can)
1 can(15 oz) kidney beans(supposed to use 2-would've been too much), drained
1 can(15 oz) black beans, drained
1 lb ground turkey
1/2 medium onion, chopped
2 TBSP Chili Powder
1 tsp Red Pepper Flakes
1/2 TBSP Garlic Powder
1/2 TBSP Cumin, ground
1 pinch Ground Black Pepper
1 pinch ground Allspice
Salt to taste

Brown turkey in the olive oil.

In crockpot put kidney beans, black beans, tomato soup, diced tomatoes, onion, chili powder, red pepper flakes, garlic powder, cumin, allspice, and black pepper.Stir up to mix in seasonings.

Add turkey and stir in to mixture.

Cook on high for 4 hours or low for 8 hours.

We served it with cheddar cheese on top and scooped it with bread. Really yummy!!!

Crockpot Chicken & Dumplin's

Serves 4

Season 4 boneless skinless chicken breasts with salt, pepper, garlic salt and rub in. Put in crockpot sprayed with Pam. Saute 1 onion, 2 celery stalks, some shredded carrot and dump onto chicken. Add 2 cans cream of chicken soup and about 1/2c chicken broth. Cook on low for about 5 hours. Tear up 2 cans refrigerated biscut dough (I used Grands Flaky) and put into crockpot, turn up to HIGH and cook about an hour.

Roast (I use for french dips)

Put one large roast in crockpot. Season with Salt, pepper, and whatever else you like. Slice up 2 onions and put on top. Add one can of beer (NOT light) and 1 can beef broth. Cook on low 8 hours.

New England Clam Chowder.

Purchase one can of Campbell's Chunky New England Clam Chowder
pour into plastic bowl (not ceramic.. they get way too hot!)
Heat for 4 minutes in microwave
Stir
Let sit for 5 minutes and serve

thought I'd add some humor. Besides, that's about the extent to which I cook these days lol. Things are too hectic to make a meal!!! >.<

Noodle Casserole

1 pkg med egg noodles
1 can condensed cream of mushroom soup (i use campbells condensed)
1 can condensed tomato soup (i use campbells condensed)
3-4 slices of american cheese
bread crumbs

Make noodles according to directions on pkg
After noodles are cooked, drain them well
Put noodles into greased casserole dish (i spray it with non-stick spray)
add soups and mix really well
break up the pieces of chesse and place along the top
sprinkle bread crumbs on top
cover and bake for 35 min at 350 degrees
uncover and bake 10 min more

this reheats and freezes really well -- the size of the casserole dish depends on how thick or thin you want it.

Ido my own homemade pizza dough and I just make it in beyween warn and hot water more toward hot water though...although if you have a digital thermometer you could measure the water temp with that and make it a little bit hotter after it maxes the thermometer out... I like my first suggestion though a whole lot easier imo..

Whoops!!! Thats supposed to be 1tsp ground thyme(optional)...Got distracted by DH who apparently decided that me baking bread and pizza dough was a turn on so i had to wack his hand with a spatula...LOL...

Jessi-thats standard temps for activating the yeast...Too hot and it'll kill it.not hot enough and it wont rise well...if you dont have or feel like using a thermometer, Joy's suggestion of running the water more towatds hot(just not scalding) it should be ok...

Those 2 things are must haves!!!The suction bulb I keep where its handy at all times and i keep 2 thermometers in the house. One for general use for everyone and one just for Lucas(since its used rectally-wouldnt want to mix those up Laughing )Alot of fevers are not harmful, but some are and you need to know how high it is...Seriously, I'd beat DH if he got rid of anything for the baby other than dirty diapers. Is there someplace you can hide those things if you need to?

omg! That's not very cool Jessi! I kept all of those things in the little bag it came in. I got that one too. I have already used the medicinal pacifier. It helps when you have to give your baby thrush medicine that tastes awful. But... how not helpful! you should pinch him every time he does something like that lol
