Ok this one is fast n easy. Its also a big hit in my house. Its a little heavy so we only make it occasionally.

Baked Ziti

1 lb dry ziti pasta
1 lb ground beef
2 (26 oz) jars spaghetti sauce
6 oz provalone cheese sliced
1 1/2 cups sour cream
6 oz mozzarella cheese - shreaded
2 TBS grated pamesan cheese

1. Boil pasta until al dente - drain
2. In a large skillet brown onion and ground beef over medium heat. Drain. Add spaghetti sauce and simmer 15 min.
3. Preheat oven to 350. Butter a 9x13 baking dish (I use a lasagna pan) Layer as follows: 1/2 the ziti pasta, Provalone cheese, sour cream, 1/2 the spaghetti sauce, remaining ziti, mozzrella cheese, remaining sauce, paremesan cheese.
4. Bake for 30 minutes in the preheated ove or until cheeses are melted.

Mexican Pulled Pork

1- 3lb boneless pork loin cut into 2 inch pieces
2 cans chilies
1/2 tsp salt
3 cloves garlic,crushed
1/4 cup chipotle sauce
3 1/4 cups water, divided
1 1/2 cups uncooked long grain white rice
1/4 cup fresh cilantro
1/4 cup lime juice

Place roast in crockpot and season with salt.Place chilies and garlic on top of roast.Pour in the chipotle sauce and 1/2 cup water.

Cover and cook 7 hours on low

In a pot bring remaining 2 3/4 cups water and rice to a boil.Mix in lime juice and cilantro.Cover and simmer on low for 20 minutes.

Remove roast from the slow cooker and shred with 2 forks.Return pork to crock pot for 15 minutes to absorb some of the juice.Serve over rice or serve fajita style with peppers, and onions and a touch of sour cream...

Very yummy and tender!!!
