So, I go to the new BCC and answer this question everyday...it really gives me some good ideas for future meals. I thought I'd steal the idea and bring it over here so my favorite group of online friends can get some inspiration. Just type what you're having and any recipe, technique or tip you'd like to add. I hope we can keep up with it! I won't post a new thread every day because it would take up our screen so I'll just keep adding to this one! So....what's for dinner?

February 4, 2009

Tonight we are having shredded chicken tacos and beef tamales w/queso.
Stage 2 apricots and sweet potatoes for Brenden

I bought 4 chickens a few months ago when they were on sale. I roasted them and then shredded the meat for future use. The queso is left from our superbowl appetizers. I was going to make a tres' leches cake but I have no heavy cream so that's out. I guess no dessert tonight. :-(

Ok me too...

Brown Sugar Pork Chops and Green beans with butter

1/2 cup brown sugar salt and pepper to taste
1/2 cup apple juice 2 tsp cornstarch
4 TBSP olive oil 1/2 cup cold water
1TBSP Soy sauce 6 boneless pork chops
1/2 tsp ground ginger

In a small saucepan combine sugar,juice,oil,soy sauce,and ginger. Bring to a boil. In a small bowl combine cold water and cornstarch, and whisk into brown sugar mixture. Sprinkle salt and pepper to taste on the pork chops then brush brown sugar mixture over chops. Re-apply sauce before removing from oven(or grill since that's the way the recipe orignally cooks them) and serve with sauce to pour over the top.

I broiled mine and they were soooo yummy but the recipe originally is for grilling.Sounds like a weird mix but it was fantastic!

Home made itallian bread pizza - Turkey Pepperoni with onions, bell peppers, mushrooms and itallian blend cheeses.

1 loaf of Italian bread cut in half lengthwise
chopped onion
chopped bell pepper
baby bella mushrooms
pizza sauce
italian cheese blend

spread pizza sauce on bread layer onions, bell peppers, mushrooms and pepperoni then top with cheese. Bake in a preheated 500 degree oven for 8 minutes.
Makes 6 pieces and each piece is 7 WW points.

Nate had 6 glorious oz of Nutramigen formula with a little zantec just for kicks.

Amy that sounds easy and yummy!

MichelleL-I love tacos and since I'm still not that crazy about beef since I was preggo, chicken is perfect!

I didn't put Luc's dinner because he has the same thing every meal, breastmilk with vitamins thrown in once a day....

Hmm Well mine was not nothing extravagant really but I made chicken Fettuccine Alfredo.The kicker is I just use 2 boxes of Pasta Roni the Fettuccine Alfredo kind and cooked up pieces of Chicken. Its almost like the Chicken Helper version but tastes way way way better. Its more creamier than the chicken helper kind.

So how to make my version you will need

1-2lbs of boneless skinless chicken breast(more or less depending on how many you will be feeding)
1-2boxes Pasta Roni Fettuccine Alfredo flavor(and of course the ingredients to prepare the pasta roni too)
3-4tbsp butter(you may need to adjust how much you use according to how much chicken you will be using)


Cut up chicken into bite size pieces. In a dutch oven Pan put 3-4 tbsp
tbsp butter. Melt butter in the pan, Add chicken pieces into pan. Cook Chicken until cooked through. Remove from Pan and set aside.
Next prepare box(es) of pasta roni as directed on the side of the box in the same pan you used for cooking chicken(no need to rinse out). During the simmering time of 5-6 minutes add in chicken so that it has time to reheat thoroughly.
Voila dinner is made..and using only one pan....

I decided to try this out one time as I was not to fascinated with the Chicken Helper fettucine alfredo because it seemed way to dry and not enough noodles. and it is quick and easy to make.

Tonight we are having beef roast, mashed potatoes, and roasted sweet carrots.

For the roast I just throw it (frozen and all) in the crockpot, sprinkle one package onion soup mix, some minced garlic, and celery pieces and cook on high for about 4 hours then on low until we are ready to eat.

Mashed potatoes come from a box....hahaha

Sweet Carrots are baby carrots tossed with melted butter, sprinkled with brown sugar and roasted in a 400 oven for about 30 minutes.

Brenden is having green beans & pear pineapple. I can not wait until he can just eat what we are having....so much easier!

Amy - I love your pizza idea! HEB has the best Italian Bread....I'm going to have to get some and try your recipe!

Shannon - we are not big on hamburger around here right now. It seems to give everybody the runs....gross. Your chop recipe sounds really good...I'm gonna have to try it!

Joy - I love your easy fetticini alfredo! Mine is similar but I use the jar sauce and add some butter and parmesan cheese to it...so simple! When I'm in the mood I'll make it from heavy cream....but not often!

last night we had take out pizza...just call your local pizza place! LOL

Tonight's menu

Pork Chops, green beans and boiled potatoes.

a tip on the pork chops to save money...when pork loin goes on sale...I get them between $1.79lb and $1.99lb, I bring it to the meat counter and ask them to cut them in 3/4in chops...much cheaper than buying boneless chops, and then I seperate them into portions and freeze them, usually I end up with a roast or two too.

anyway tonight I am putting the chops into a casserole dish and spread a can of cream of mushroom soup over them and salt and pepper and bake on 350 for about 45min...boil a few potatoes, and warm up some green beans.

I should make dinner tonight b/c I haven't for days.....last night we ate the last of the leftover superbowl chili.

I haven't gotten anything out of the freezer yet. It's going to be nice out so maybe I'll get something out to grill, even if it's just burgers. Either that or polish sausage, potatoes, sauerkraut. DH has been craving that for a while now.

We are having :
Cheesy One-Pot Chicken Cacciatore

1 tsp. oil
1 lb. boneless skinless chicken breasts, chopped
2-1/2 cups water
2 zucchini, chopped
1 small onion, chopped
1 Tbsp. chopped fresh oregano
1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Cheese Dinner
1 can (14-1/2 oz.) stewed tomatoes, drained


HEAT oil in large skillet on medium-high heat. Add chicken; cook 5 min. or until browned.

ADD water, vegetables, oregano and Pasta. Bring to boil; simmer partially covered, 12 min. or until pasta is tender.

STIR in Cheese Sauce and tomatoes; cook until heated through.

EAT - Yummy Yummy Yummy!

Nate will be having the same thing as last night. I surprised he isnt burnt out yet.

Michelle- Usually my taters come from the box too much faster and hubby likes them better than reg potatoes boiled. Also I love the days when I use my crockpot for making dinner such an easy way to have something for dinner with not a lot of hovering over the stove.

Kim- I love your idea of the pork loin and having the meat dept slice it. Will have to try that out sometime. Dh loves pork chops but I have not been a fan of them much since I was pregnant with ODS and the smell of pork anything made me nauseated so normally it is just him eating the pork chops and if the kids decide they want to have some.

Bekah- I get in the mood of not wanting to cook quite often just because it seems like I cook and do dishes cook and do dishes....gets blah after a bit But I have been trying to do dishes daily instead of every 2-3 days but I still hate dishes.. Wishes I had a really nice dishwasher..the ones that don't leave icky food bits on your supposedly clean dishes..heck I would be happy with a cheap one too.

On an awesome note since it has to do with the same room cooking takes place in, I was able to clean my oven on the stove. It has been quite a while since it was done but for the most part it looks all shiny and nice on the inside. I used the $ store version of oven cleaner and the kind you use in a cold oven so thats probably why it didnt work on every spot in the oven but there is only a couple areas on the door that still have stuff on it. I ll just tackle those next time I clean oven and use Easy off the kind you use in 200 F oven..

Tonight we are having fried chicken breasts, corn on the cob, and scalloped potatoes & biscuits. We usually do pizza on Friday but we ordered that the other night when I spent all day doing our freakin' taxes.

The chicken is an easy technique. Rince chicken breasts (I like bone in for this) with water, season meat with salt and pepper then shake in seasoned (I use TexJoy seasoning salt) flour. Put about 1 inch of vegetable oil in a glass baking pan and set chicken breasts meat side down in oil. Bake at 375 for about 45 minutes. I turn my over about 15 minutes prior to taking out so the bottom can get crispy too. I know it sounds like a strange way to make fried chicken but it's actually less oil and less mess! ;-)

Corn is cooked in the oven on the shelf above the chicken. Just husk, spray with no calorie butter, season, wrap in foil and cook the length of the chicken cooking time.

Scalloped potatoes come from a box. Imagine that.

Biscuits are frozen Pillsbury Southern Style biscuits

Brenden is having green beans (his favorite) and plums. We tried meat last week without much success. He liked it (A LOT) while he was eating it but it didn't really agree with him later IYKWIM.

Joy - My family likes boxed potatoes too and they are so much easier!

Kim - Many times I buy a whole loin at Sams and just cut it myself when I get it home. You are definately right about it being cheaper! I think it tastes better, too!

Bekah - I've cooked nearly every night since getting married. My guys expect food and lots of it. There are times when we order out for pretty long stretches but I get just as sick of that as I do cooking. I try to make easy things since Brenden has come along....he doesn't always cooperate. I love the 4 cheese lasagna hamburger helper...do they still make that?

Diana - Did you cook last night? We've been eating super bowl leftovers for snacks! Dawson couldn't wait to get home from school and eat the sweet and sour meatballs Monday!!! He was so funny about it!

I'm thinking about doing a pot roast tonight...Easy recipe and I've seen it everywhere with really good reviews but have yet to try it so I think I will...

2-3lb roast
1 packet italian dressing
1 packet ranch dressing
1 packet brown gravy
1/2 cup of water

Throw them all in a crockpot and cook for 6-8 hours or until tender.

Joy- I am not the hugest fan of pork but the recipe I used the other night(i posted it on here) was soooo simple and really very good!!I do make a really good pulled pork in the crock pot as well...

Bekah- I try and plan out my meals for the week on the friday before(when dh gets paid) that way i know what i need at the store.Only problem is that by the end of the week theres not much stuff left so i usually do crockpot meals and if i dont have it in the crocpot by a certain time I dont know what to make for dinner...That happened yesterday...I planned on a turkey chili(really yummy!!!!)but Luc wouldnt cooperate long enough for me to do anything...Hence the pizza! Used to love Hamburger Helper btw!

Ok well DH had to work late last night so we are moving the cheesy chicken cattchatorrie to tonight and we had a fend for yourself night. I ended up having a left over piece of pizza from the night before, a yogurt and a few almonds. DH heated something up out of the freezer - like a panini or something and Nate had the usual!

Oooooooo Michelle I love your idea of the fried chicken in the oven...do you use boneless chicken for that and also I am surprised that the oil doesn't start smoking inside the oven....... ooo one more question about that...does the oil spatter when cooking in the oven....it definitely sounds different from the traditional way of frying chicken but I am all for an easier way if possible...And I like the idea that you do not have to worry about a frying pan all full of grease afterwards...

Joy - I use bone in chicken but I'm sure boneless would work also...just lessen the cooking time. No, the oil doesn't spatter or smoke. I use a regular baking dish that has tall sides, nothing like a jellyroll pan or anything. I've been cooking it this way for years. It doesn't get the thick crust you get when pay frying or deep frying, but it's nice and crispy!

Saturday is a crazy day for us. We used to eat out every Saturday for a late lunch but that has been less and less because of the expense. I'm trying to save as much as possible just in case. So I am making one of our favorites from our favorite Resturant....Outback Steakhouse: Coconut Shrimp, baked potatoes, and salad.

Coconut Shrimp - I developed a pretty easy way to get the thick batter. I take three bowls (1) flour and a little cajun seasoning (2) egg wash made with 1 whole egg and 1 cup beer (3) 1 cup flour mixed with 1 cup coconut and a little cajun seasoning. The process is simple. I buy easy peel shrimp (deveined and cut) and rinse well, pat dry. Get your oil ready (I use canola) for deep frying and heat to 350. Holding the tail of the shrimp dip in bowl #1, making sure to get flour on all sides but NOT on tail. Quickly dip in bow #2 and finally lay it in bowl #3 and pat coconut mixture into side then turn and repeat. Fry until it floats. Serve with Smuckers Orange Marmalade. I usually mix some more cajun seasoning into the marmlade.

Baked Potatoes - I've learned if you clean and dry them then rub with Olive Oil and sprinkle with kosher salt they taste like the resturants.

Amy - I am making your french bread pizza today for lunch! Dawson is so excited! He's walked by that bread atlease 12 times since I bought it yesterday and said "yum.....that's gonna be gooooooood". LOL

Elise - How do you make your banana pancakes? I made buttermilk pancakes nearly every Sunday morning and I'm getting sick of them....
