Well as its going to be just me for dinner tonight it will probably be something easy like a microwave pizza or left overs (chicken stir fry or pot roast). Or I will do the single person dinner of cereal, cheese and almonds. Wahoo Party at my place!

Tonight it's just me and the kids, so it'll probably a leftovers dinner for me and a whatever dinner for the older 2. Logan will have his veggies and maybe I'll give him a little fruit for dessert. He liked the applesauce in his cereal yesterday and this morning it was bananas and he enjoyed that too!

We are having last nights fett alfredo tonight. I spent almost 2 hours on the phone with my catering customer...grrrrr.....and I ended up running to Boston Market to pick up dinner since it was almost 6 when I got off the phone.

Amy- How does the single person dinner work...cereal cheese and almonds? Do you mix them...errr that one caught my eye and the oddness of it forced me to inquire...

joy - LOL no I dont mix them. Its really a snacking dinner where you walk through the kitchen and grab a handful of almonds or cereal or a piece of cheese and just eat it and keep moving.
I actually had a lean cusine pizza and a couple of baked Cheetos and a banana.

Last night we had Amy's pizza with sausage and onion...OMG it was so good! I used a sourdough french bread from Target and it was so soft and chewy.....DELICIOUS! I also made a salad with spinach, dried cranberries, sliced almonds, and cider vinegrette. Brenden had green beans & apricots but didn't eat too much.
Tonight we had hotdogs (YUCK) since we had such a fabulous lunch at Carraba's and none of us were really that hungry. I had some kind of stuffed chicken breast with a mushroom & wine sauce and fettucini alfredo.....so delicious! Brenden had pears at the resturant and vegetable beef & pinapple pear for dinner. BTW, he is so good at the restuarants it makes me wanna eat out everyday.....he loves being in public and watching every one!

Tonight we had Hawaiian Chicken
Chicken Breasts marinated in Lawrys Hawaiian marinade topped with pineapple and baked in the oven at 375 for 40 minutes
Garlic Mashed potatoes - 6 red potatoes peeled and boiled for 20 min with chicken bullion and minced garlic and mashed with butter and milk.
and Steamfresh Frozen Peas

We had Spaghetti with Ragu sauce and Meat last night the 21st. The night before that it was just a whatever you feel like eating night...Tomorrow...not sure what it will be right now but something with the rest of the hamburger we did not use for spaghetti..

Tonight we are having grilled ribeyes, stacked cheesy potatoes, and some homemade bread.
I'll marinade the steaks in soy and rosemary then sprinkle with kosher salt and grill.
For the potatoes I slice about 6 large white potatoes as thin as I can get them and layer them in a square casserole dish that I have buttered. You really have to stack the layers to get the effect of this dish. Anyway, I spray butter, salt & pepper, and sprinkle parm cheese about every 3 layers. After I am done layering I pour melted butter of the entire casserole and bake at 350 for about 40 minutes. The potatoes are not meant to be creamy....they are really crispy and oh so good. Sometimes I use garlic salt in place of reg salt.
Next week we are having what I am making for the catering lunches for dinner. Yea! I only have to buy breakfast items and a few snacks for next week! :-)

We had Amy's French Bread Pizza...actually DH mentioned to his sister how good it was so she wanted us to go there after church and make it so I ended up making dinner over there and thats what it was...they loved it..
Michelle I just may have to go get some steaks this week and try out that potato recipe of yours it sounds awesomely yummy.

Last night was Beef Stronganoff. Tonight is going to be Tacos or something quick and easy since DH has to go out to dinner with one of the guys he met with in Texas that is up here today.

Ok its a toss up for me tonight. We can either have
Amy's Pizza or Spaghetti. With the spaghetti I would saute' onions, peppers, mushrooms and garlic and add it with some meat to the sauce and get some refridgerated pasta.
Or we do pizza... I am thinking pizza right now but we shall see how the day turns out.

Tonight is catering food! 3 meat lasagna (italian sausage, ground beef, pepperoni), salad with greens, artichoke hearts, olives, sweet red onion, cucumber, & croutons, cheesey garlic bread and fresh fruit. It will be so nice to just throw the lasagna in the oven at 4:30 and not have to worry about assembling it! :-)

We're having grilled pork steaks, grilled eggplant & salad.
I've always heard that pork steaks are a St Louis thing but I'm not sure...do you girls have them in your area. It's pork butt (which is called 'butt' BUT it's actually the butt of the shoulder) sliced into steaks.
Just curious if it's really just in this area.

Well last night I did the Amy's Pizza thing but I did hamburger, mushroom and onion. Well my tip for the day is dont use a whole lb of meat. It ends up being like a meat sandwich. I had never tried the hamburger before. You live and learn!

Diana - I make pork steaks once in awhile....I like them on the grill. My mom makes them A LOT with rice-a-roni.
Tonight we are having a tortellini & italian sausage soup, cheesey garlic bread, and a salad with greens, tomatoes, cucumber, artichoke hearts, olives and tuscan dressing. For dessert is a butter cake with warm chocolate pudding spooned over the top.

We're having fried fish that DH caught on his fishing trip last year...thank goodness for foodsaver. Not sure of the sides yet.

Ok its another choice night and my DH will get to choose. We will either have the pasta I bought yesterday (chicken & herb tortallini) with cabaret maranara or we will have Mexican Chile Lime chicken with Rice and a veggie.
